Margo's is a Mexican-inspired kitchen in the Mall, built around sharing plates and a serious margarita list. It's open every day from 4pm till late, so it works for an early drink or a long dinner.
The cooking isn't strictly traditional. The chefs draw on where they've worked as much as on Mexico, and it lands well. Order tacos and fajitas to split, guacamole with the house salsas, and nachos. At the plant-based end of the table there's crispy coconut cauliflower with cashew queso, and tofu fajitas. Vegans get a real section of the menu, not one token dish.
If you'd rather not choose, Trust El Jefe is the chef-picked shared menu. Blanco is $69 a head and Reposado is $79 (two or more, whole table in). Happy hour runs daily from 4 to 5pm, with cheap frozen margaritas, Coronas, and guac with El Jefe's salsas.
The dining room is loud in a good way, and the booths fill fast on a weekend. It suits a group more than a quiet two-top, so book ahead if you're coming Friday or Saturday.
